“Delicious Garlic Potato Eggplant Carrot Casserole”

Here is a wonderful casserole that's delicious and full of lots of healing nutrients. It's anti-inflammatory, helps to prevent cancer, lowers blood pressure, lowers cholesterol, protects the nervous system, great for protecting and healing the brain, and full of lots of powerful antioxidants that prevent disease. This simple casserole takes no time at all to make and everyone in the family will love this recipe.

Another Whole-Foods Plant-Based Recipe

Ingredients:

6 - Cups of Organic Potatoes - Boiled and Mashed - or you can use Name' or Taro Root — Boil the Potatoes with 2 Tablespoons of Organic Garlic Powder for a Great Garlic Flavor.

6 - Cups of Organic Eggplant - Cut into Small Pieces - that seems like a lot but it cooks down.

2 - Cups of Organic Carrots - Grated

1 - Large Organic Yellow Onion - Chopped

12 - Cloves of Organic Garlic - Minced - Use for the Filling

3 - Large Organic Tomatoes - Chopped

8 - Oz of Organic Black Olives - Sliced

4 - Oz of Organic Tomato Paste

3 - Tablespoons of Mrs. Dash Seasoning

Filtered Water

Salt and Pepper to Taste

Garnish Before Baking - With One Sliced Organic Tomato and a Few Organic Small Leaf Basil or Large Leaf Basil Cut into Small Pieces... and Shake on a Little Bit of Sweet Paprika Powder for Color Here and There.

Boil the potatoes with the garlic powder, drain, and mash them and set them aside. Then take the onion and garlic and sauté them in a little bit of water until translucent. Then add the eggplant, carrots, tomatoes, tomato paste, black olives, Mrs. Dash Seasoning, salt and pepper and enough water to cover and cook down until everything is tender.

Then in a 9 x 6-inch oven proof pan add a layer of mashed potato, then add the cooked veggie mix, then add another layer of potato. Garnish the top of the casserole before baking with sliced tomato and a few small leaf basil leaves or large leaf basil cut into small pieces.

Bake in a preheated 400 Degrees oven for 1 hour or until the casserole starts to bubble on the sides.

Remove from the oven and let cool

I find this casserole is even better the next day after being in the frig overnight.

Slice and serve with a nice green salad for a full spectrum meal

Serves 12 people
