Here is a simple and very tasty casserole that will warm your heart and tummy. Full of the goodness of potatoes, carrots, zucchini, Hubbard squash, olives, and mushrooms. This recipe contains lots of healing nutrients to keep you going all day long. And also the healing qualities of turmeric which is a powerful anti-inflammatory agent that helps to keep away "Cancer" and pain.
Another Whole-Foods Plant-Based Recipe
5 - Pounds of Organic Potatoes - Boiled and Mashed with the skins on, and 2 Teaspoons of Organic Turmeric Powder Added and salt and pepper, you don't taste the turmeric at all. You can also use Malanga Root, Cinnamon Vine or Name' Root, Taro Root, or Yuatia instead of potatoes and Taro Root has a very low glycemic index.
4 - Large Organic Zucchini - Chopped in Large Pieces
1 - Medium Organic Hubbard Squash Peeled and Seeds Removed - Chopped in Large Pieces
12 - Large Organic Carrots - Chopped in Large Pieces
20 - Large Organic Mushrooms - Chopped in Large Pieces
12 - Oz of Organic Kidney Beans - Cooked
12 - Large Organic Garlic Cloves - Minced
3 - Tablespoons of Organic Balsamic Vinegar
1/3 - Teaspoon of Organic Stevia Powder
2 - Tablespoons of Organic Garlic Powder
1 - Tablespoon of Organic Arrowroot Powder
Salt and Pepper to Taste
Just a Little Bit of Hot Sauce to Your Own Taste - You can leave this out if you like
(Optional) - Chopped Organic Green Onions as Garnish
Take the veggies for the filling and boil them until tender and discard most of the water. When the veggies are still hot add the salt, pepper, balsamic vinegar, hot sauce, stevia, and a little bit of arrowroot to thicken the little bit of water that is left to make the sauce.
Now take the filling and place it in a 10 x 15 x 4-inch deep pan. Then add the mashed potatoes with turmeric and salt and pepper and spread evenly over the filling.
Bake in a 400-degree oven for 1 hour or until the filling starts to bubble. It's already cooked so it doesn't need too much cooking.
I took just a little bit of organic hot sauce and spread it over the top of the casserole for a decorative look. And served each piece with chopped green onions as the garnish.
Let cool and serve
This casserole is even better the next day when all the flavors have come together.
And this casserole could easily be put together ahead of time and place in the freezer and then placed in the oven at the last moment for a gathering.
This recipe serves 12 people or 6 hungry guys
