Here is another scrumptious cake that will do the body good. It's super tasty, full of great nutrition and it's sugar-free, very low fat, and high in protein, anti-inflammatory, naturally sweet, great for diabetics, full of antioxidants, high in fiber for building probiotics, and contains resistant starches that are great for feeding probiotics and so much more. This cake is very moist and will keep in the frig... but I know for sure it will not last long. My wife loves this cake... and she is hard to please when it comes to desserts.

Another Whole-Foods Plant-Based Recipe


6 - Cups of Organic Pears - Sliced in Long Thin Slices

1/2 - Cup of Organic Pears Mashed - This keeps the cake moist

1 - Cup of Organic Oatmeal Flour

2 - Cups of Organic Buckwheat Flour

1/2 - Cup of Organic Tapioca Flour

1 - Inch of Fresh Organic Ginger Ground Up - or 1 1/2 Teaspoons of Organic Ginger Powder

3/4 - Teaspoon of "Now" Brand Stevia Powder - If using another brand it might be different.

1 - Teaspoon of Organic Baking Powder

1 - Teaspoon of Organic Baking Soda

1 - Teaspoon of Organic White Vinegar

1 1/2 - Teaspoons of Organic Vanilla Extract

1/3 - Teaspoon of Salt

2 - Cups of Filtered Water

3 - Tablespoons of Organic Honey to Drizzle on top

Garnish - Just a Little Bit of Chopped Organic Pineapple

Take the pear slices and place them in a 9 x 9-inch baking pan. Then take the mashed pears, oatmeal flour, buckwheat, tapioca, ginger, stevia, baking soda, baking powder, vinegar, vanilla, salt and water and mix well into a nice batter. And pour this over the pear slices.

Place in a 400-Degree oven for 1 hour or until the top is nice and crusty and it starts to bubble on the sides. Remove from the oven and drizzle with honey.

Let cool and slice

Serves 12 people
