“Spicy 3 Corn 3 Pepper Mexican Rice”

Here is a wonderful recipe that's sure to please everyone and makes a great party dish to serve when friends come over. Filled with the healing nutrition of 3 different types of corn and the goodness of 3 different types of grilled peppers. Organic corn is full of powerful antioxidants and contains short-chain fatty acids that fight cancer and lots of good protein. Plus it also contains lots of fiber for growing healing probiotics.

Another Whole-Foods Plant-Based Recipe

Ingredients:

4 - Cups of Cooked Organic Brown Rice

12 - Oz of Organic Whole Yellow Corn - Fresh or Frozen

12 - Oz of Organic Hominy Corn - Frozen... but canned will also work

3 - Cups of Organic Corn Tortillas made crisp in the oven, then crushed up. You can also use "organic baked salt-free corn chips" (No Oil Added) if you can find them.

1 - Large Organic Red Bell Pepper - Roasted and Skin Removed - Chopped

1 - Large Organic Yellow Bell Pepper - Roasted and Skin Removed - Chopped

8 - Oz of Canned Organic Mexican Green Chiles - Chopped — these can also be found in the Mexican area of your store in cans.

3/4 - Teaspoon of Organic Ground Turmeric Powder— for that Nice Yellow Color

2 - Cup of Organic Mexican Salsa — Mild, Medium, or Hot

12 - Oz of Organic Roasted Cashew Nuts

1 - Teaspoon of Chili Powder

Add a Little Salt According to Your Taste

And a Bit of Filtered Water

Take the cashews and add 1 cup of salsa and just enough filtered water to blend until creamy. This makes a nice sauce which is very tasty.

Now take everything else and mix together and also add the cashew sauce. Place in a loaf pan and garnish with some tortilla wedges, and sprinkle a little chili powder on top as a garnish.

Bake in the oven at 400-degrees for 45 minutes or until the top becomes golden brown.

Let cool and serve

Serves 12 people

You could also use this rice to make burritos or serve as a side dish with anything else.

I recommend serving this rice with a nice green salad for a full spectrum meal.
